Hi.
Is there any way to find out the values of variables set in the [General]
section of extensions.conf from the Asterisk CLI (not from inside the dialplan, I just mean at the “hostname*CLI>” prompt)?

No, global variables are different.
They are defined in the [globals] section of extensions.conf.
I’m talking about the [general] section.
